Cabernet Sauvignon : The classic profile of Cabernet Sauvignon tends to be full-bodied wines with high tannins and noticeable acidity that contributes to the wine's aging potential but it's its ease of cultivation (thick skins and hardy vines, naturally low yielding, late budding to protect against frost etc) and ability to thrive in most regions has led to it being the most widely planted varietal worldwide. it's signature flavours do vary - in cool climates it's mostly blackcurrant flavours and in hot regions you will get more ripe (even 'jammy') flavours with mint and eucalyptus flavours to the fore.
Most widely associated with Bordeaux where it is normally blended with Merlot and/or Cabernet Franc (it's grand-daddy!)
